Buzz: Paramour to Open in the Wayne Hotel

This fall Paramour, a sophisticated bar and restaurant serving modern American cuisine, will open in the historic Wayne Hotel.

It’s been all the buzz of downtown Wayne since the obvious renovations started over the winter-what would be replacing the Wayne Hotel’s beloved restaurant, Tacquet, which moved out two years ago? Now Main Liners have an answer.

This fall Paramour, a sophisticated bar and restaurant serving modern American cuisine, will open in the historic hotel and Main Line landmark. With a distinctive atmosphere and an affordable menu of seasonally-inspired dishes, Paramour is sure to become a new favorite for those seeking a sophisticated—albeit welcoming—dining experience. “At Paramour, we’ve created an inviting, energetic restaurant that our guests will want to visit again. This will be the perfect place for a special-occasion meal, but also a fun spot for a cocktail or a glass of wine and a quick bite. Paramour is all about a great experience,” enthused Michael Giampa, Director of Restaurant Development for S.W. Bajus Ltd. The Bajus’ have been owners of the Wayne Hotel since 1985 which recently completed an extensive two-year renovation to the property, including an expansion of the original restaurant space.

Paramour will offer four areas for guests to dine, grab a light bite or have drinks with friends: the outdoor veranda, boasting a gardenlike setting and comfortable, mocha-colored rattan chairs and couches; a contemporary lobby lounge featuring high-backed cream leather chairs, ottomans and a working fireplace; a lively bistro bar with plush semi-circle banquettes; and a stunning main dining room with direct views of the chef’s bar and open kitchen.

The innovative menu at Paramour will feature unparalleled cuisine, executed by Chef Maurice Kim deRamus. A graduate of the Culinary Institute of America, Chef Kim deRamus is classically trained, with over 15 years experience working in some of the area’s top kitchens including, most recently, as Executive Chef at A La Maison Bistro in Ardmore, PA.

In the bistro bar, Paramour’s chic design will feature dark floors contrasted by crisp white walls and upholstery with eye-catching pearl accents and brushed metal details throughout. Floor-to-ceiling windows with sheer curtains, a brick wall that is hand painted with a pearlescent hue, and custom-designed silk and crystal chandeliers all add to the refined ambience. A striking bar, made from exotic Wenge wood with a modern granite top, will offer the area’s top beverage selection with a focus on wines and craft beers from the United States.

The stylish and elegant main dining room will feature a dramatic bay of windows, a bold geometric patterned carpet, cream marble floors and a glass-walled wine display. A black granite chef’s bar accented with nickel “penny” tiles will showcase the day’s raw bar and crudo offerings and will be a prized seat for up to eight guests. Dinner items will include: Crudo Sampler; Salt Cured Lancaster Beef; Pork Cheeks, with creamy grits and onion jam; Shaved Root Vegetable Salad, made withheirloom beets, water melon radish, bell carrots, parsnips, fennel and açai-guava dressing; Charred Himachi Collar, with young green beans, crispy rice and chili vinaigrette; and Chestnut Ravioli, filled with shredded Lola duck, chanterelles and brown butter. The dining room menu also offers a “Primal Cuts” section featuring local beef, Berkshire pork and Colorado lamb with steakhouse inspired side dishes and “Fresh Catch” a whole-baked fish, encrusted in salt, that will be filleted tableside. Menu prices will range from $9 to $38.

An all-day menu will be available in the bistro bar, lobby lounge and on the veranda, from 11:30 a.m. to 12 midnight, seven days a week. Guests may choose from a variety of dishes, perfect for every day dining, including shareable and small plates, entree salads, burgers and sandwiches like Kobe Beef Sliders; a large selection of made-to-order flatbreads including Salumi and Ricotta Salata; Lancaster Bacon and Truffle English Pea Pesto; Roasted Eggplant and Half Dried Tomatoes; and a selection of “Bar Bites” including Crispy Chicken Oysters with creamy cilantro dipping sauce; Devils on Horseback, Medjool dates stuffed with gorgonzola and Lancaster bacon; and Lola Duck Meatballs with Korean Hot and Sour sauce. Prices will range from $5 to $18.

Lunch at Paramour will be served Monday through Friday, from 11:30 a.m. to 3 p.m.; dinner will be served Sunday through Thursday, from 5 to 10 p.m. and on Friday and Saturday until 11 p.m. An all-day dining menu will be available in the bistro bar, lobby lounge and on the veranda from 11:30 a.m. until midnight, seven days a week. Sunday brunch will begin a few weeks after opening.
